What is Focaccia?
Focaccia is a flat leavened oven-baked Italian bread. In some contemporary places, such as Rome, it is a style of pizza, also called pizza bianca. This style of bread is near and dear to my heart being of Italian descent myself❤️
The key to good focaccia is olive oil! The dough is risen in, coated and contains lots of olive oil. Here at Old Town Farmstand we start with our sourdough starter, no conventional yeast in our focaccia. We add a high quality, cold pressed, extra virgin olive oil. Each batch is slow risen and hand shaped. We add toppings like fresh Rosemary and basil, garden fresh tomato purée, carmelized onions etc… Then we bake these on a high temp for a short time which gives them their crisp yet soft pillowy texture. These are good straight out of the bag but for an amazing treat we like to throw these into our toaster oven for a couple minutes to crisp them back up😁
